10 Simple Healthy Meals

One of the hardest things about eating healthier is thinking about what to make each day. I have compiled 10 of my favorite "thrown together" simple healthy meals. These are meant to hopefully give you an idea of what to do with foods you already have in your kitchen. Feel free to swap out ingredients. Vegan Sushi Bowl


Brown rice, carrots, diced cucumber, diced avocado, tofu, top it with a mixture of vegenaise with sriracha sauce, and seaweed sheets


It’s like an unwrapped sushi roll in a bowl & so easy to make!



Quinoa + Avocado + Potatoes


A super easy base to make for breakfast, lunch or dinner!





Dairy Free Personal Pizza


Low carb tortillas, dairy free cheese, tomato sauce and optional seasoning (I like using Italian seasoning). Bake at 350 for approximately 15-20 minutes. I like the tortilla to get nice and crispy!





Lentil Salad Wrap

Lentils, raisins, green pepper, balsamic vinaigrette, cilantro and avocado wrapped in a low carb tortilla.


Open Faced Vegan Tacos


Black bean, mushroom & green chili filling. Cabbage, carrots & lime juice topping. Topped off with a dollop of guacamole. Super easy to make and a delicious meal!


Homemade Breakfast Burrito


Ground turkey, egg white, and salsa on a flour tortilla. Add whatever veggies you like. So much healthier than a store bought version!



Quick Veggie Bowl


This raid the fridge recipe is made up of mashed potatoes, yucca & frozen mixed veggies! Super quick and easy to throw together.




Healthy Stir Fry


This healthy stir fry recipe was super easy to make for a yummy dinner that you can quickly throw together. I used chicken breast, a frozen veggie blend, chopped celery, onions and peppers, seasoning that I had in my cupboard, coconut aminos, and garlic and salt to taste.




Garbage Pizza Snack


Throw any leftover veggies on a low carb tortilla, a little tomato sauce, and sprinkle some nutritional yeast and spices on top. Bake at 375 for 8 minutes. That's it!




Chicken Fajitas


I threw together this super easy chicken fajita recipe for dinner. I chopped up chicken, onions and peppers, seasoned with taco seasoning, pan fried in the oven for about 25 minutes. Served in a lettuce wrap with a side of rice. Quick and easy!
